TODAY IS THANKSGIVING IN CANADA
In CANADA we celebrate Thanksgiving in October, it’s a National holiday here and a day off most.
I have fond memories of Thanksgiving Dinner growing up at home.
My Mum was a wonderful cook and she never had a rejection for a Thanksgiving dinner invitation. 
Her creative cooking many times was to compliment a dinner...for example, Thanksgiving would be a big meal and desert was meant to be satisfying...she soon realized her regular Pumpkin pie was too filling after a big meal and created her lighter now famous PUMPKIN CHIFFON PIE !!!
So Saturday I set to making one or two Pumpkin Pies and Tarts to take to our Neighbours for Thanksgiving Dinner last night...mmmm. It was a Hit!!
Here’s a Few Photos of my Pumpkin pie production...very important to fold in your well beaten egg whites into the pie mix after letting it cool.
